Fitzbillies set to re-open

Famous Cambridge bakery Fitzbillies is set to re-open this summer.

The shop on Trumpington Street closed down earlier this year but now two new proprieters are set to take it over.

Husband and wife team Tim Hayward and Alison Wright have released an online statement confirming they're taking over the site.

In it they say: "We're very happy to announce that Fitzbillies, Cambridge’s favourite cake shop, will reopen this summer as an independently-owned British bakery and café.

We're proud to be involved in revitalising this Cambridge institution and are working closely both with our landlords, Pembroke College and the Cambridge Listed Buildings team to bring Fitzbillies back as a working bakery and cakeshop while improving the dining areas to modern standards.

With sensitive refitting of the interiors of both 51 and 52 Trumpington Street we aim to create different environments for comfortable eating at whatever speed our customers want, from ‘sit-down’ meals to more casual coffee and snack areas.

The menu will reflect Fitzbillies’ heritage as a town bakery with most dishes prepared in the baker’s oven. We will be serving products proudly made in our own kitchens, from ingredients directly supplied by local East Anglian producers, to recipes inspired by traditional British dishes.

We will, of course, continue to produce ludicrously sticky and delicious Chelsea buns, in a constant stream, from our own ovens."
